Kenyan pilau is a popular Eastern rice that is cooked at events and many use this meal to show off their culinary expertise. It is not just eaten in Kenya but in Tanzania as well.
The origin of this meal can be traced back to Indian and Arab roots leaning more to the Arab side in terms of its preparation.
Kenya pilau consists of rice as the base of the dish with beef, chicken, or vegetables, in broth and spices.
Ingredients
- Long grain basmati rice
- Ground pilau masala spice
- Diced beef
- Crushed garlic, ginger and cloves
- Bay leaves (optional).
- Stock cube (optional).
- Cooking oil
- Beef broth and hot water
- Potatoes also optional
- Onion
- Serrano chile, finely chopped
- Tomato paste
- Salt to taste
Method
1. In a bowl mix the cumin, cardamom, paprika, black pepper and cloves. Set aside.
2. In a medium heat pot, add oil and onions and stir fry for 10-15 minutes, until dark brown.
3. cook for 2 minutes the garlic, serrano chile, pilau masala, cinnamon sticks, ginger, seasoning cubes and cilantro.
4. Add the diced beef and cook for about 8 minutes.
5. Add the tomatoes and cook for 4-5 minutes, until the tomatoes have released their liquid.
6. Add in the potatoes with added water and bring to a boil and cook for 10 minutes.
7. Add the rice, stir, and cover. Reduce the heat to medium-low and cook for 20 minutes, until the rice is cooked and the liquid is absorbed.
